As long as you provide "winning_evidence" when responding to the dispute in test mode it should get resolved pretty much immediately https://stripe.com/docs/testing#evidence

You submitted the evidence for this dispute. Stripe has sent it to your customer’s issuing bank. We expect to hear back from the issuing bank within 40-90 days.

I want to test to receive a winning dispute webhook immediately, so I can update the status to my app

I'm actually not seeing `"winning_evidence" in your dispute response at all

It should be in that textbox. In the dashboard form that when responding to the dispute, there will be a link that says "+ Additional Information". If you click that and then type "winning_evidence" in to that box before submitting your response, the dispute should be resolved instntly
