Such that when I on-board again with the same email address, it treats it as a new registration and not he same customer logging in again?

It won't technically delete the account since that account will be standalone now -- the Platform can't delete Standard accounts since they are their own full account. The account can only be deleted by logging into that account's Dashboard and closing the account. However once removed from the platform when you onboard again you should be able to onboard a new account with the same email.

It keeps coming up saying that there was an error deleting my data

I can see that it's deleted a decent amount of what was there originally

But it now seems stuck on Application Fees, Customers and Sources

I've tried it about 3/4 times but same result
