so right now by default we have this text on apple pay button

Sorry, I'm still not sure I understand. You want to change the text to something other than the options listed there? If so, I don't think that is something Apple permits.

Yes, i would like to change the button text, in screenshot you see it's just Pay with apple icon, i would like to add something before that

No, not that I'm aware of. The style and text of that button is controlled by Apple's policies.
