Hello, happy to speak to your questions
This is our current API configuration
Our new release is targeting "2022-08-01"
First, we do not have this API as an option in the "Upgrade" screen in the dashboard
Is this something Stripe support needs to make available for us and then during our depoyment would set this new API version as our default via the dashboard?
As far as I know upgrades can only go to the latest version though I can check if it is possible to upgrade to a specific version. Is there a reason you are looking to go to upgrade to "2022-08-01" rather than "2022-11-15"?
We were able to upgrae to a specific version in our lower environments
Our release is targeting that specific version
2022-08-01
Gotcha, in that case yes talk to our support team https://support.stripe.com/?contact=true
I'm not sure if they can schedule your API version upgrade but you can definitely make sure your code and webhooks use those specific versions so that it doesn't matter when exactly the default version changes

Why not use the absolute latest version to have all the latest bug and security fixes?
Because all the testing was done for the release targeting the specific version and we can not risk anythign not working as expected
At these type of days anything can cause security issues.
We don't restrict security fixes like that. It is fine to upgrade not all the way, I just wanted to ask if there was a specific reason. Totally happy to help you upgrade to the 2022-08-01 version
The release was developed by an outside firm and we do not have the bandwidth to retest targeting the latest API version
