Where is your Stripe account located?

OK but it seems that you have to select a default a/c for payments
mine is currently set to GBP
However I need to collect EUR for an event that I'm setting up today...
Do I don't want those funds to be paid into the default a/c
How are you using Stripe to collect payments?
The idea is if you use collect payments where the presentment currency is EUR, then that'll automatically settle in your EUR balance (and eventually pay out to the EUR account)
Same goes for GBP

You need to obviously adjust your checkout flow to account for that (i.e. present EUR to event X and GBP to event Y).

Ok, then assuming you've added a EUR bank account to Stripe it should work as needed
Nope, that just means for any non-GBP/EUR currency you sell in (i.e. USD) we'll do FX and settle in GBP. This is all explained here: https://stripe.com/docs/payouts/alternative-currencies
