hi! not sure what you mean 100%. The amount in the Payout object is exactly what we transfer to your bank and you would receive, it's inclusive of any fees(which are deducted at the time the customer's payment was processed).
if you're asking how to get the fees you pay on processing the payments that made up that payout, see https://stripe.com/docs/expand/use-cases#charges-in-payout to get a list of the payments, and then https://stripe.com/docs/expand/use-cases#stripe-fee-for-payment to get the fee for them
