I created a metadata on a customer and now I'd like to delete it so it doesn't show up in the customer columns as an option anymore

You can update the customer metadata by using the Update API endpoint
https://stripe.com/docs/api/customers/update#update_customer-metadata

Set of key-value pairs that you can attach to an object. This can be useful for storing additional information about the object in a structured format. Individual keys can be unset by posting an empty value to them. All keys can be unset by posting an empty value to metadata.

I removed it from the one customer that had it, but it's still showing up here
