Alright, was able to reproduce and confirm where this is coming from after resolving issues with my test express account
You can't influence this ahead of time, but you can update the description of payment intent associated with the invoice, which is what is displayed there in the express dashbaord
So you can set that to an appropriate description for the particular invoice

ok thanks for the help! I was suspecting id have to update afterwards. Is there any logical reason as to why nothing influences that and a random string is used by default instead of the infinite descriptions im allowed to pass?
also it would be great if the docs were updated to reflect that this would happen, i seem to spend a lot of time whilst using these connect accounts figuring out which api parameter is going to affect which value on the UI
Not sure why this product decision was made but yeah I can flag internally to update the docs for this
