An applciation fee is the amount defined by the Connect platform, for their 'fee' for handling the payment

#

That is entirely optional. The processing fee is the amount deducted from the payment by us (not optional)

is it possible to deduct the processing fee from a top up balance and not from the transaction itself?

It is not, no

Let's say a guest account is buying something for 50$, the fee would have to be deducted from that 50$. So the payment to the connected account would be 50%-(X)
Is there then a way to set up something that allows me to send 50$-(x)+(x) to the connected account?

(where X = processing fee)

We don't offer a way to automatically calculate the given fee for a payment, no. If that's important to you you'd need to calculate that yourself and then compute the application fee accordingly
