We just help developers use our api directly in here. We're not familiar with the shopify integration, so recommend you reach out to them if modifying payment method settings in Stripe isn't having an effect on your checkout page.

You can go to Stripe support if it's a stripe-specific question, but sounds like this may also be an issue with Shopify
