Yep totally possible

#

Are you using Stripe Subscriptions?

Yes, let me confirm that

#

but their orders are one-off invoices

#

that's the part I'm not sure how to do with apple pay, without requiring them to re-auth each time

#

In the past I think someone from Stripe mentioned that we'd have to tie the order invoice to the subscription somehow?

Yeah so from the link you shared:
Your customer must authenticate with the Apple Pay payment sheet each time—attempting to reuse payment information for a non-subscription payment can result in it being declined.
If these are one-off invoices the customer would have to auth each time. For the weekly payments, you could have that as a separate subscription. If it's a varying amount based on usage, you could use a usage based pricing model: https://stripe.com/docs/products-prices/pricing-models#usage-based-pricing

Great, usage based pricing looks like what I need.
Are there any restrictions on only being able to use that for physical goods vs digital goods?

Not that I'm aware of, but recommend checking with our support team to be certain: https://support.stripe.com/contact
