I only have the payment ID on the dashboard:

So there seems to be a unique invoice id for each payment (for each month). What I am more curious about, is why I sometimes do not receive the invoice.paid event ?

Are you just listening with the stripe CLI?

I tried both the stripe CLI (on which everything seems to be fine) and a website endpoint created through the dashboard

Ah so the CLI looks like it's behaving fine for you? It's just this separate wwebhook endpoint that seems to be the issue?

but the friend for whom I developped it tried it on the website

And in the print, somehow, there lacked the invoice.paid event as you can see in the logs

Do you have the webhook endpoint ID (we_123) for your friend's website?
