Are you looking to use Plaid specifically or do you just want to do ACH bank transfers?
In any case, it's a deprecated way of doing US bank transfers. Now Stripe provides a new way with us_bank_transfer payment method type: https://stripe.com/docs/payments/ach-debit/accept-a-payment
You won't need to use Plaid in this case.
And then you will be able to use it with Connect as you would with any other payment method type, e.g. card.

You will be calling the Plaid.linkTokenCreate that's provided by the Plaid package, and not Stripe, so you can't provide the Stripe-Account header here.
Maybe your connected account will need their own Plaid account. I've never worked with Plaid before, and I strongly recommend to adopt the new US bank transfers while you're making changes. It's much simpler than the old way, and you won't have any issues with Connect.
