If you're the ones creating the Subscription through the API then you should be in control of just not adding the coupons to the Subscription, right?

That would explain it then - if you add the coupon to the customer it'll apply to all their recurring charges

There's no way to get around it - the only thing you'd be able to do is remove the coupon from the customer and set it on the specific subscriptions you want to apply it to

what if we make a different coupon and manually specify it when make a subscription? would that override the one on the customer object

I believe it should override the one on the customer object, but I'd suggest testing it out just to be sure
