can you give an example of where we might want to specify something here for the connect settigns for a client?
It's entirely up to you. Metadata is arbitrary, Stripe does not use it, we only store it.
I would like a real world example ... I'm sure stripe added it for a reason and I would just like to understand the use case better to know if it might be helpful for us.
You could set the key to favorite_color and set the value to blue.
