So we receive payments for our events via Ticket Tailor but it's the bulk payments to our bank account that I'd like to change the currency on

Oh, so you want to change your settlement and payout currency? That is limited based on the country your account is located in. You can view the settlement currencies that are available for your country via the drop down available here:
https://stripe.com/docs/connect/bank-debit-card-payouts#supported-settlement

I'm not certain though how to change those if there are multiple available to you, and that may depend on how Ticket Tailor built their Stripe integration. Did you have a Stripe account before you started working with Ticket Tailor?
