I tried to create the MRR calculation through stripe but I seem to be somewhat off everytime

Also, there's no direct fields/APIs for metrics like that to reflect the Dashboard numbers (which I guess is what you're comparing to when you say 'off')

I download the stripe MRR csv and compare it to my own results, my results are off

from processing sigma data and trying to calculate the MRR

As explained, those metrics (e.g. MRR) are calculated by non-public APIs. There's no API endpoint or field you can just use to get that data, so yes you need to calculate it manually
