The Test mode webhooks events will be sent to all endpoints configured in Test mode (same in Live mode). There's no way to only separate the development environments.

If you want to stop receiving all Test mode webhook notifications on your machine, stop the stripe listen command.

How do I enable stripe to send webhooks for only the payments created from now on ?

You mean you want to limit the event types for this endpoint?
