I mean it does not allow me to choose which Affirm account (API keys or whatever) to connect to. The transactions do not show on the Affirm account I already have.

Are you asking whether it's possible to use a different affirm account when you're testing payments, or are you asking whether you can connect/accumulate funds in your own affirm account?

Accumulate funds in my own affirm account, whether it's in test mode or not.

Ther's no way to do that through stripe - payments collected through stripe always accumulate in your stripe balance
