The easiest way to do this imo is to actually just pay an Invoice on your account with a customer set up how you so desire.

Otherwise, you can use the --override flag like you are mentioning, or you can use the --edit flag which lets you edit the fixture itself

In case I want to use the CLI, Do I have the override syntax correct? I'm just guessing here based on examples at https://stripe.com/docs/cli/trigger

You want your Customer ID instead of Customer Name
