this customer cus_OB5tUF5v2z3DpK has this subscription the 20 euro and now he update the subscription to this 100euro the first subcription will be cancel ?

I think you are confusing this. When the customer updates the subscription it replaces the previous setting. So when they updated their subscripton they replaced the 20 Euro price with the 100 euro price

In that case you need to make sure to use "always_invoice" when allowing your customers to update their subscriptions
