In the payment link API, it seems like creating a product and its value is mandatory

but our use case is a loan emi use case where each customer will have a different emi amount

I am not familiar with your use case (emi or loan etc) so can't tell, but yes PaymentLink is created from a Price. You can't have 1 PaymentLink for multiple prices

No PaymentIntent API is different than PaymentLink/Checkout, it's a more barebone API

You could have 1 Produce and multiple Prices
