Okay so what's your exact question" You said "from Stripe Checkout" but you can use Checkout in an "uber-like app" so I'm not sure I follow what you are asking

So we have a customer side and a pro side. The customer makes the payment and the payment is held until friday where the funds are released to the pro. We where told how we are doing things now we are acting as an escrow. We want to avoid any distinguish of that and have stripe act as an escrow instead

Yeah I would highly recommend that you go back to our support team for this and they can help you figure out the right flow of funds instead. I don't think this Discord server is the right place to get that kind of help.
I don't understand their feedback since most "uber-like" apps are built exactly like you describe: you get the funds, you're the "uber", and later you send those funds to the driver that did the ride. That's exactly how it should work
So there is likely some compliance limitations and our support team is where you should get help instead
