Don't think the item is taken off the invoice if you set the quantity to 0 versus deleting it takes it off of the invoice.
You can actually just run a quick test in test mode, that should help you confirm

Ok I'll play around with it in test mode. I've been setting quantity to zero which works to remove the item and charge the prorated time they used, but I just noticed the deleted flag in the docs and was wondering if there is a suggested use case for either way of doing it.
