Payment Links and Checkout Session are very similar, so it's up to you.
The advantage of Payment Link is that you create it once and can be reused many times without expiring. Checkout Session can only be used once and will expire within 24 hours.

In my case, a payment is for 1 user only, as every customer had to pay something different
But if the checkout session expire after 24 hours, it is problem for me

You can have a link in your email to your own website. And when people click it, you dynamically create a new Checkout Session.
