Ok, does the email go automatically once we switch to live mode? - or is there any additional steps to take for that to happen?

It depends on your account settings. If you have the settings adjusted to send the email then it does work automatically in Live mode

I am trying to use Stripe Invoice API's.. is it mandatory to create Price to send a invoice to collect payment for?

And I see that a Price should always be associated with a Product?

Yes. Invoices are designed to work with Product and Price records.
