I'm trying to understand which type of payment structure I need to use for my Connect account, I've talked to normal support 3 times and each person told me a different one. I'm working with restaurants, setting them up loyalty programs so they can make passive income (subscriptions). I want to take a 10% application fee on those subscriptions. I have the onboarding setup all done for standard accounts (Getting the clients an account link from my platform) but now im unsure
The end customer should not be seeing my platform anywhere, they need to be purchasing from the actual restaurant

Gotcha, Standard Connected Accounts and Direct Charges sound like the right combination for that.

Okay thanks, now can I use a stripe payment link to do this ?
Like on the restaurant's checkout page its a stripe subscription tier thing for the different clubs

Yes, as far as I am aware you can use Payment Links with Direct Charges.
