Unfortunately that isn't currently possible in Checkout as far as I know, the price needs to be set upfront. Will double check to see if we have a workaround. If there isn't you might need to do something like have a checkbox above your button or link to the Checkout page that asks if the user wants to cover their fees

No direct way to do this as far as I can see unfortunately. One potential workaround would be making this a line item with an adjustable quantity and let the user set it to either 0 or 1 but I haven't tested that. That might be usable or what that quantity means/does may be too unclear to your donors https://stripe.com/docs/api/checkout/sessions/create#create_checkout_session-line_items-adjustable_quantity-minimum
