Has anyone here ever converted a Stripe Connect account from Express to Custom?
there is no native feature for converting an Express Account to a Custom Account. You need to create a new Custom Account for each existing Express account
For the onboarding of a Custom Account, you need to follow this guide:

For Custom Account you need to handle the verification process on behalf of your connected Account.
