Stripe only has one default category that is either a tangible good or downloadable software. Is there a way to have both in your default category?

Ah no it's not possible today
in that case you would configure your products/prices to have the right information
https://stripe.com/docs/api/products/create#create_product-tax_code you can set this based on what the Product represents
