I assume Stripe automatically selects payout account depending on the payment currency. Or do we need to create a condition to accomplish this?

I have follow up questions after talking to finance and things look a bit complicated.
So, we receive USD payments for several countries (Japan, USA, Canada and Puerto Rico) and receive EUR payments for the rest of the world.
We'd like to have USD payments coming for US go to USD payout account and the other payments (Japan, Canada, Puerto Rico and RoW) go to our EUR account. Ofc, here for USD payments there will be exchange when making a payout to EUR account.
And if this works, how does it work with verification documents? The finance department states that Stripe asks for verification documents (I don't know what they are) and they want to make sure such split does't cause issues with those documents.
