Yep see https://stripe.com/docs/connect/charges-transfers which discusses creating Transfers not directly associated to a single charge.

This is fine to do as long as your Connected Account is in the same country/region as your platform.

You can either use metadata or you can set a transfer_group

Yep as long as you don't create a destination charge
