As stated, I don't believe it's related to Stripe but more the Apple APIs for Tap to Pay. Quick search of the Charge" doesn't include the com.apple.developer.proximity-reader.payment.acceptance entitlement. Profile qualification is using entitlement definitions that may be out of date.
