and is there a reason why Apple Pay works even though we are not collecting Shipping? .. the doc says that we should have the same issue with Apple Pay (?)

Not a requirement for Apple Pay

The only requirement for Apple Pay is that the browser supports it

I don't recall the exact reasoning why this is required for Google Pay but not Apple Pay....
