1/ Checkout Sessions created from a Pricing Table should support any PaymentMethod types that you have enabled in your Dashboard at https://dashboard.stripe.com/settings/payment_methods
2/ For call to action you can't set the button text at the moment. I could add a feature request for that.
3/ You need to create multicurrency Prices which we discuss in our docs here: https://stripe.com/docs/payments/checkout/present-local-currencies

So I do see that you have other payment method types enabled like ideal and sofort - the issue with those payment method types is that to get them to work with recurring payments you also need to have sepa direct debits enabled
I understand, but what about others like Apple Pay, Google Pay?
For those it depends on what you have set up - are you sure that you have apple pay and google pay set up correctly? Are you testing in incognito mode by any chance?

Yeah right now it looks like there's no way to change the order of the call to action product - I can flag that as feedback, but if this is something you'd want to be notified if they change it you'd need to write into support (https://support.stripe.com/contact) so they can contact you when it's done
