got it, okay so this will hold for seven days, is there any way to hold for a longer length of time? Like 14 days?

The short answer is no. The long answer is that there are some limited exceptions for very specific use cases, but you would need to talk to support to see if you're eligible for those: https://support.stripe.com/contact/email
The full context here is that I would like to place a security deposit on hold until their booking is completed. Then if there is any damage I need to charge them a custom amount (so no the full security deposit amount) trying to figure out if there's a way to do this in stripe
