A connected account could work but often it is simpler to send all of the funds to your main bank account and work out the fund dispersal yourself.

This assumes the stripe fee structure would never change right? Or if it does I’d need to change the application to accommodate a fee structure change ?

That is the standard fee structure for Stripe accounts. If you have worked out a different one you can talk to our support team on how best to calculate that one but otherwise that should be consistent across payments
