Okay I don't think we can though I agree it's a bit surprising

The problem with custom placeholders is that they don't work well with localization so it's likely why we don't support customizing it. I'd recommend flagging to our support team https://support.stripe.com/contact as a feature request and they can escalate to our product team. But for now you're unfortunately out of luck in this case.

What you could do is collect the email yourself and disable collection in PaymentElement and pass it to us on confirmation but this is a bit more manual 😦

For what it's worth we also have no placeholder even on our main Checkout product where we build/own the full payment/checkout flow

so I assume we did some A/B testing and think it converts well this way
