When does the new price take effect for current subscribers? Will they start paying the new price immediately, or will this occur after their current billing cycle ends?
If you update a subscription to use a new price then that price is reflected on that subscription immediately, but whether or not they pay for the difference in price it immediately or at the end of the current cycle depends on how you make the update request. You'd set proration_behavior: always_invoice if you want to charge for it immediately and you'd set proration_behavior: create_prorations if you want any difference in price to just be rolled into the next invoice at the end of the billing cycle

What's the recommended way of notifying subscribers about this change? I understand that I need their consent for the new price, but what mechanisms does Stripe provide for managing this process?
We don't offer any mechanisms for managing this process - you'd have to build those out yourself.
