mainly, write the request ID to disk. but i'd love to be able to inspect the entire headers as well.

Should be able to get the req_xxx ID (and headers) via the request_end hook: https://github.com/stripe/stripe-ruby#instrumentation

not exactly what i wanted but this seems workable. the separation between when the call was made and a central place for trying to figure request id out is unfortunate.
