I am trying to generate cards through the issuing API.

Once the card is created and set to active, I am retrieving the card numer, exp month, etc using the expand=['card'] method but the CVV isn't there?

You need to expand the response to get CVC: https://stripe.com/docs/api/issuing/cards/object#issuing_card_object-cvc
