No you can't hit any API mid Checkout Session. What you are looking for isn't really possible unless you collect the shipping address prior to redirecting to the Checkout Session.

Hi there 👋 jumping in as my teammate needed to step away. If you collect the Shipping Address elsewhere, then I believe it may be best to disable shipping address collection for the Checkout Sessions you're creating, that way you don't have to worry about customers trying to provide new addresses.

Ah that makes sense, does the metadata section accept objects? Can i pass that shipping info through the checkout session to the webhook it will send

metadata only accepts key/value pairs where both the key and value are strings, you may be able to encode your own objects in there as strings as long as they don't exceed the 500 character limit.
I would also suggest considering storing the shipping address on the Customer object if you're leveraging those, though it will be an extra request to retrieve the information from us if you do that.
