Is there any way to do this if I don't know if the customer will want the invoice beforehand?
If you don't know then you'd want to choose a default behaviour on behalf of your customer I guess.

yeah the thing is that not all of those customers want it, sometimes they don't provide their TaxID.
We don't want to make the TaxID mandatory bc it hurts our conversion.

and generally I wouldn't want to enable it for all of them if they don't need it. Just a few request it.

if there's no way to do it I'd maybe analyze using another invoice generator tool.

There's no way to generate a post payment invoice after checkout session has succeeded unfortunately. So in that case, you'll need to generate your own invoice
