This isn't something our team would know a ton about as Woocommerce is a third-party integration. I'd recommend talking to them directly as they'd be in a better position to help than us.
I'll give them a bell - just trying to pin point where the issue starts, I'm thinking it may be hosting related and not stripe or the plugin its self
