Quick question - are you seeing these DNS settings change after a particular action? Like are you switching wifi networks at all?

they're always connected to the same wifi network

we do manage the network. On the network side do you think it would help if we made the IPv4 address for the device static rather than dynamic?

That could work (but I'm also not the best with networking)

Another option would be to change the DNS settings on the router itself (instead of doing it manually just for the reader)

You should be able to change the DNS settings on the router itself to use a different DNS server
