I recommend that you try this out on your account in test mode.

It's up to what you're trying to do. What are you really trying to achieve? Can you add more details?
I just want to give the customer an additional month on their subscription and make sure it doesn't try to bill them again until next month
I see, that is not how it's going to work. It will calculate prorations, https://stripe.com/docs/billing/subscriptions/prorations and I'm afraid it's going to have unintended side effects.
In this case, you can just void in the invoice.

You could on that invoice via the Dashboard and that will be bring the invoice to paid status.
