There are a myriad of ways you could go about doing that. I would start here to get up to speed on Stripe Connect here: https://stripe.com/docs/connect
On the side bar you'll see other articles for specifics, pay very close attention to choosing your account type (https://stripe.com/docs/connect/accounts) and the 3 different Connect funds flows (e.g. direct charges, destination charges, and separate charges & transfers https://stripe.com/docs/connect/charges)

I am working at a firm that has an existing platform non-connect account, and I want to learn more about how to do it on the non-connect accounts
do you have resources for those?

but in practice, I dont understand the flow yet, so I need to build it from scratch with a fake account inorder to understand how it flows first
So you would then use that account as the Stripe platform and go through the motions of choosing what account type to onboard, then what charge type to use. All this is covered in our docs and there are several quickstart guides for whichever path you take
The ones I listed above should cover everything or link out to things that cover important details about specifics.

We don't staff 24/7. We close the channel at 5pm Pacific time on Fridays and resume during business hours on Monday
