The only way to do this would be to transfer funds to their account (you'd have to be a platform and they'd have to have a stripe account that's connected to yours).

if my customer has a bank account, could I do it that way or is using stripe connect the ONLY way?

The only other potential way would be using Stripe Treasury + outbound payments (https://stripe.com/docs/treasury/examples/moving-money#outboundpayments)
