Restricted keys generated by Stripe CLI expire within 60 or 90 days, there's no way to prevent those from expiring
If you created Restricted keys manually by visiting the dashboard, I don't think they expire unless someone rolls the key

Replacing the key, you can do it on this page https://dashboard.stripe.com/apikeys
