It's a best practice to let PaymentElement does that for you. It's a built in solution and we optimize for conversion rate and regulations automatically. It would be a pain if you need to trace down what regulation changes happens in which countries at what specific time and write the logic on your own

Yes you should be able to. When you create the PaymentIntent, specify the payment_method_types
